Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup salsa (choose your heat level)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1/2 cup heavy whipping cream
  • 1/4 cup freshly chopped cilantro (optional for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, warm the olive oil over medium heat.
  3. Season the chicken breasts with garlic powder, ground cumin, smoked paprika, salt, and black pepper.
  4. Sear the chicken in the skillet for about 5-7 minutes on each side until golden and cooked through.
  5. Transfer the chicken to a plate and keep warm.
  6. In the same skillet, pour in the salsa and let it bubble gently.
  7. Stir in the heavy whipping cream until well combined.
  8. Gradually add the shredded sharp cheddar and pepper jack cheeses, stirring continuously until creamy and melted.
  9. Arrange the cooked chicken breasts in a baking dish and drizzle the cheesy salsa mixture over them.
  10. Bake in the oven for 15-20 minutes, or until the cheese sauce is bubbling and golden.
  11. Allow to rest for a few minutes before serving. Optionally, sprinkle with fresh cilantro.
