Ingredients

  • 1 pound ground turkey
  • 4 large bell peppers (any color)
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes (canned or fresh)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  4. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
  5. Stir in the cooked quinoa, diced tomatoes, oregano, basil, paprika, salt, and pepper. Cook for another 2-3 minutes until heated through.
  6. Remove from heat and fold in the crumbled feta cheese.
  7. Spoon the turkey mixture into each bell pepper, packing it down gently.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender.
  10. Garnish with chopped parsley before serving.

Notes

  • For added flavor, try mixing in some chopped olives or sun-dried tomatoes into the filling.
  • If you prefer a vegetarian option, substitute the ground turkey with a mix of black beans and lentils.
