- 1 pound ground turkey
- 4 large bell peppers (any color)
- 1 cup cooked quinoa
- 1 cup diced tomatoes (canned or fresh)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the cooked quinoa, diced tomatoes, oregano, basil, paprika, salt, and pepper. Cook for another 2-3 minutes until heated through.
- Remove from heat and fold in the crumbled feta cheese.
- Spoon the turkey mixture into each bell pepper, packing it down gently.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender.
- Garnish with chopped parsley before serving.
Notes
- For added flavor, try mixing in some chopped olives or sun-dried tomatoes into the filling.
- If you prefer a vegetarian option, substitute the ground turkey with a mix of black beans and lentils.
