  • 1 pre-made pie shell
  • 1 tablespoon extra virgin olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 6 cups fresh spinach, roughly chopped
  • 4 large eggs
  • 1 cup heavy whipping cream
  • 1 cup crumbled feta cheese
  • 1 cup grated mozzarella cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. Place the pre-made pie shell into a 9-inch pie plate and set aside.
  3. In a large frying pan, warm the olive oil over medium heat.
  4. Add the chopped onion and sauté for about 3-4 minutes until soft and translucent.
  5. Stir in the minced garlic and cook for another minute until fragrant.
  6. Add the chopped spinach and cook until wilted, about 3-5 minutes.
  7. Remove the pan from heat and let the mixture cool for a few moments.
  8. In a separate bowl, whisk together the eggs and heavy whipping cream until blended.
  9. Incorporate the crumbled feta, grated mozzarella, dried oregano, sea salt, black pepper, and crushed red pepper (if using).
  10. Gently mix in the sautéed spinach and onion mixture until well combined.
  11. Pour the filling into the prepared pie shell.
  12. Bake for 35-40 minutes, or until the filling is set and the top is golden.
  13. Allow to cool for about 10 minutes before cutting into wedges.

Notes

  • For a spicier quiche, add more crushed red pepper.
