A flavorful recipe adventure featuring Mechouia & Mafrum Rolls, combining roasted vegetables and spiced meat wrapped in grape leaves.

- 1 cup roasted red peppers, chopped
- 1 cup roasted eggplant, chopped
- 1/2 cup fresh parsley, chopped
- 1/2 cup green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 pound ground beef or lamb
- 1/2 cup cooked rice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon allspice
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 8 large grape leaves, rinsed and drained
- Olive oil for brushing
Instructions
- Preheat your oven to 375°F.
- In a large bowl, combine the roasted red peppers, roasted eggplant, parsley, green onions, garlic, cumin, paprika, salt, and pepper. Mix well.
- In another bowl, combine the ground beef or lamb, cooked rice, cinnamon, allspice, breadcrumbs, and the beaten egg. Mix until well combined.
- Lay a grape leaf flat on a clean surface, with the stem end facing you. Place about 2 tablespoons of the meat mixture at the base of the leaf. Fold in the sides and roll tightly from the base to the tip.
- Repeat with the remaining grape leaves and filling.
- Place the rolls seam-side down in a baking dish. Brush the tops with olive oil.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, until the tops are golden brown.
- Let the rolls cool for a few minutes before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the meat mixture.
- You can also substitute the grape leaves with cabbage leaves for a different flavor and texture.
