Description

Ingredients

  • 1 cup roasted red peppers, chopped
  • 1 cup roasted eggplant, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 pound ground beef or lamb
  • 1/2 cup cooked rice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon allspice
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 8 large grape leaves, rinsed and drained
  • Olive oil for brushing

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine the roasted red peppers, roasted eggplant, parsley, green onions, garlic, cumin, paprika, salt, and pepper. Mix well.
  3. In another bowl, combine the ground beef or lamb, cooked rice, cinnamon, allspice, breadcrumbs, and the beaten egg. Mix until well combined.
  4. Lay a grape leaf flat on a clean surface, with the stem end facing you. Place about 2 tablespoons of the meat mixture at the base of the leaf. Fold in the sides and roll tightly from the base to the tip.
  5. Repeat with the remaining grape leaves and filling.
  6. Place the rolls seam-side down in a baking dish. Brush the tops with olive oil.
  7. Cover the dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, until the tops are golden brown.
  9. Let the rolls cool for a few minutes before serving.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the meat mixture.
  • You can also substitute the grape leaves with cabbage leaves for a different flavor and texture.
