- 4 cups chicken broth
- 1 cup dry white wine
- 1 pound firm white fish fillets (like cod or halibut), cut into chunks
- 1 pound shrimp, peeled and deveined
- 1 pound mussels, cleaned and debearded
- 1/2 pound chorizo sausage, sliced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced bell pepper, cooking for an additional 3 minutes until softened.
- Add the chopped tomatoes, thyme, basil, and red pepper flakes. Cook for another 5 minutes, allowing the tomatoes to break down.
- Pour in the chicken broth and white wine, bringing the mixture to a simmer.
- Add the chorizo slices and simmer for 10 minutes to infuse the flavors.
- Gently add the fish chunks, shrimp, and mussels to the pot. Cover and cook for about 5-7 minutes, or until the mussels open and the fish is cooked through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley and lemon wedges on the side.
