  • 4 cups chicken broth
  • 1 cup dry white wine
  • 1 pound firm white fish fillets (like cod or halibut), cut into chunks
  • 1 pound shrimp, peeled and deveined
  • 1 pound mussels, cleaned and debearded
  • 1/2 pound chorizo sausage, sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and diced bell pepper, cooking for an additional 3 minutes until softened.
  3. Add the chopped tomatoes, thyme, basil, and red pepper flakes. Cook for another 5 minutes, allowing the tomatoes to break down.
  4. Pour in the chicken broth and white wine, bringing the mixture to a simmer.
  5. Add the chorizo slices and simmer for 10 minutes to infuse the flavors.
  6. Gently add the fish chunks, shrimp, and mussels to the pot. Cover and cook for about 5-7 minutes, or until the mussels open and the fish is cooked through.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley and lemon wedges on the side.
