Description
Delicious and refreshing fish tacos topped with a vibrant Mauritian pineapple and chili salsa, perfect for summer.
Ingredients
Scale
- 2 cups fresh pineapple, diced
- 1 small red onion, finely chopped
- 1 jalapeño pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon honey
- Salt and pepper, to taste
- 1 pound white fish fillets (such as tilapia or cod)
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 8 small corn tortillas
- Lime wedges, for serving
Instructions
- Mix the diced pineapple, red onion, minced jalapeño, chopped cilantro, lime juice, honey, and a sprinkle of salt and pepper in a bowl. Allow to sit for about 15 minutes.
- Season the fish fillets generously with cumin, smoked paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook the seasoned fish fillets for approximately 3-4 minutes on each side until golden brown and flaky.
- Warm the corn tortillas in another skillet or microwave until soft and flexible.
- Assemble the tacos by placing a piece of cooked fish on each tortilla, spooning over the pineapple and chili salsa, and adding extra cilantro if desired. Serve with lime wedges.
Notes
- Let the salsa sit to enhance flavors.
- Adjust the spice level by adding more or less jalapeño.
- Use any white fish of your choice.
