- 1 cup canned white beans, drained and rinsed
- 1/2 cup creamy almond butter
- 1/4 cup maple syrup
- 1/4 cup brown sugar, packed
- 1/4 cup coconut flour
- 2 tablespoons matcha powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup white chocolate chips
Instructions
- Preheat your oven to 350°F. Grease an 8×8-inch baking dish or line it with parchment paper.
- In a food processor, combine the white beans, almond butter, maple syrup, brown sugar, coconut flour, matcha powder, vanilla extract, baking powder, and salt. Blend until smooth and creamy.
- Fold in the white chocolate chips gently with a spatula.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Allow the blondies to cool in the pan for at least 10 minutes before slicing into squares.
Notes
- For a nuttier flavor, try adding 1/4 cup of chopped nuts like walnuts or pecans to the batter.
- For a vegan version, substitute the white chocolate chips with dairy-free chocolate chips.
