Delicious Matcha Tahini Swirl Banana Muffins that combine the flavors of banana, matcha, and tahini for a delightful treat.

- 2 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup tahini
- 2 tablespoons matcha powder
- 1/4 cup milk (dairy or non-dairy)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, mix the mashed bananas, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- In a small bowl, mix the tahini, matcha powder, and milk until smooth.
- Spoon half of the muffin batter into the prepared muffin tin. Add a dollop of the matcha tahini mixture on top, then cover with the remaining muffin batter. Swirl a toothpick or knife through the batter to create a marbled effect.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a sweeter muffin, add 1/4 cup of chocolate chips to the batter.
- To make these muffins gluten-free, substitute all-purpose flour with a gluten-free flour blend.
