Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup tahini
  • 2 tablespoons matcha powder
  • 1/4 cup milk (dairy or non-dairy)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, mix the mashed bananas, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  4. In a small bowl, mix the tahini, matcha powder, and milk until smooth.
  5. Spoon half of the muffin batter into the prepared muffin tin. Add a dollop of the matcha tahini mixture on top, then cover with the remaining muffin batter. Swirl a toothpick or knife through the batter to create a marbled effect.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a sweeter muffin, add 1/4 cup of chocolate chips to the batter.
  • To make these muffins gluten-free, substitute all-purpose flour with a gluten-free flour blend.
