Delicious Matcha Peanut Butter Cookie Bars that are easy to make and perfect for any occasion.

- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon matcha green tea powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until smooth and creamy.
- Add the egg and vanilla extract to the peanut butter mixture and stir until well combined.
- In a separate bowl, whisk together the flour, matcha powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If using, fold in the chocolate chips.
- Spread the cookie dough evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
- Once cooled, cut into squares and enjoy!
Notes
- For a nut-free version, substitute peanut butter with sunflower seed butter.
- Add a sprinkle of sea salt on top before baking for a sweet and salty flavor combination.
