Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 2 tablespoons matcha powder
- 1/4 cup collagen peptides
- 1/4 cup shredded coconut
- 1/4 cup dark chocolate chips (optional)
- Pinch of salt
Instructions
- In a large bowl, combine rolled oats, almond butter, honey or maple syrup, matcha powder, collagen peptides, shredded coconut, and salt.
- Mix until all ingredients are well combined.
- If using, fold in dark chocolate chips.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to a week.
