Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 2 tablespoons matcha powder
  • 1/4 cup collagen peptides
  • 1/4 cup shredded coconut
  • 1/4 cup dark chocolate chips (optional)
  • Pinch of salt

Instructions

  1. In a large bowl, combine rolled oats, almond butter, honey or maple syrup, matcha powder, collagen peptides, shredded coconut, and salt.
  2. Mix until all ingredients are well combined.
  3. If using, fold in dark chocolate chips.
  4. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  5. Place the energy balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the fridge for up to a week.
