Description

A refreshing and delightful treat made with matcha and coconut.


Ingredients

Scale
  • 2 cups coconut milk
  • 1/4 cup matcha powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (optional)

Instructions

  1. In a mixing bowl, combine coconut milk, matcha powder, honey or maple syrup, and vanilla extract.
  2. Whisk the mixture until smooth and well combined.
  3. If desired, stir in shredded coconut.
  4. Pour the mixture into popsicle molds.
  5. Insert sticks and freeze for at least 4-6 hours or until solid.
  6. To remove popsicles, run warm water over the outside of the molds for a few seconds.

Notes

  • Adjust sweetness to taste by adding more honey or maple syrup.
  • For a creamier texture, use full-fat coconut milk.
  • These popsicles can be stored in the freezer for up to 2 weeks.
