Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons matcha green tea powder
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or a light coating of cooking spray.
  2. In a mixing bowl, blend the mashed bananas with the melted coconut oil until smooth.
  3. Incorporate the granulated sugar, egg, and vanilla extract, stirring until creamy and well combined.
  4. In another bowl, sift together the all-purpose flour, shredded coconut, baking powder, baking soda, salt, and matcha powder.
  5. Slowly introduce the dry ingredients into the wet mixture, stirring gently until just combined—be careful not to overmix.
  6. If desired, fold in the chopped nuts for added texture.
  7. Spoon the batter into the muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for about 5 minutes before moving them to a wire rack to cool completely.

  • For a sweeter treat, consider increasing the sugar to 3/4 cup.
