- 2 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons matcha green tea powder
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or a light coating of cooking spray.
- In a mixing bowl, blend the mashed bananas with the melted coconut oil until smooth.
- Incorporate the granulated sugar, egg, and vanilla extract, stirring until creamy and well combined.
- In another bowl, sift together the all-purpose flour, shredded coconut, baking powder, baking soda, salt, and matcha powder.
- Slowly introduce the dry ingredients into the wet mixture, stirring gently until just combined—be careful not to overmix.
- If desired, fold in the chopped nuts for added texture.
- Spoon the batter into the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for about 5 minutes before moving them to a wire rack to cool completely.
Notes
- For a sweeter treat, consider increasing the sugar to 3/4 cup.
- You can also add 1/2 cup of chocolate chips for an indulgent variation.
