  • 1 cup shredded cheddar cheese
  • 1 large egg
  • 1/4 cup almond flour

  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (for topping)
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
  2. In a food processor, combine the steamed cauliflower, cheddar cheese, egg, almond flour, garlic powder, onion powder, paprika, salt, and pepper. Pulse until the mixture is smooth and well combined.
  3. Using a tablespoon, scoop the mixture and form small balls or puffs. Place them on the prepared baking sheet, leaving space between each puff.
  4. Sprinkle the grated Parmesan cheese on top of each puff for added flavor and a crispy finish.
  5. Bake in the preheated oven for 15-20 minutes, or until the puffs are golden brown and firm to the touch.
  6. Remove from the oven and let cool for a few minutes before serving.
