- 1 cup cauliflower florets, steamed and well-drained
- 1 cup shredded cheddar cheese
- 1 large egg
- 1/4 cup almond flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (for topping)
- Cooking spray or olive oil for greasing
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
- In a food processor, combine the steamed cauliflower, cheddar cheese, egg, almond flour, garlic powder, onion powder, paprika, salt, and pepper. Pulse until the mixture is smooth and well combined.
- Using a tablespoon, scoop the mixture and form small balls or puffs. Place them on the prepared baking sheet, leaving space between each puff.
- Sprinkle the grated Parmesan cheese on top of each puff for added flavor and a crispy finish.
- Bake in the preheated oven for 15-20 minutes, or until the puffs are golden brown and firm to the touch.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a spicy kick, add 1/4 teaspoon of cayenne pepper or chopped jalapeños to the mixture.
- You can substitute the cheddar cheese with mozzarella or pepper jack cheese for different flavor profiles.
