  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 cup seasoned breadcrumbs
  • Vegetable oil, for frying

Instructions

  1. Mix the leftover mashed potatoes with mozzarella, pecorino, chives, paprika, thyme, sea salt, and black pepper in a large mixing bowl until evenly blended.
  2. Shape the mixture into small balls, roughly the size of a golf ball, and arrange them on a tray.
  3. Prepare a breading setup with flour in one shallow bowl, whisked eggs in another, and seasoned breadcrumbs in a third bowl.
  4. Coat each potato ball first in flour, then dip it into the eggs, and finally roll it in the breadcrumbs.
  5. Heat about an inch of vegetable oil in a deep skillet over medium heat until it reaches around 350°F.
  6. Carefully add the potato poppers in batches, ensuring they have enough space to fry evenly.
  7. Cook each popper for about 3-4 minutes per side, or until golden brown and crispy.
  8. Transfer them to a plate lined with paper towels to absorb excess oil.
