Description

Marrow Laksa is a comforting and flavorful noodle soup made with beef marrow bones, coconut milk, and a variety of fresh toppings.


Ingredients

  • 1 pound beef marrow bones
  • 6 cups water
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons curry powder
  • 1 tablespoon chili paste (adjust to taste)
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 8 ounces rice noodles
  • 2 cups bean sprouts
  • 1 cup fresh cilantro, chopped
  • 2 green onions, sliced
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F. Place the beef marrow bones on a baking sheet and roast for 20-25 minutes until browned.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.
  4. Add the curry powder and chili paste, stirring to combine. Cook for 1 minute.
  5. Pour in the water and add the roasted marrow bones. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. After an hour, remove the bones and strain the broth to remove solids. Return the broth to the pot.
  7. Stir in the coconut milk, soy sauce, and fish sauce. Simmer for an additional 10 minutes.
  8. Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
  9. To serve, divide the cooked noodles into bowls, ladle the hot broth over the noodles, and top with bean sprouts, cilantro, and green onions.
  10. Serve with lime wedges on the side for squeezing over the dish.

Notes

  • For a vegetarian version, replace the beef marrow bones with vegetable broth and add tofu for protein.
  • Adjust the level of spiciness by varying the amount of chili paste or adding sliced fresh chilies as a garnish.
