Description
Marrow Laksa is a comforting and flavorful noodle soup made with beef marrow bones, coconut milk, and a variety of fresh toppings.

- 1 pound beef marrow bones
- 6 cups water
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons curry powder
- 1 tablespoon chili paste (adjust to taste)
- 1 can (14 ounces) coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 8 ounces rice noodles
- 2 cups bean sprouts
- 1 cup fresh cilantro, chopped
- 2 green onions, sliced
- Lime wedges for serving
Instructions
- Preheat the oven to 400°F. Place the beef marrow bones on a baking sheet and roast for 20-25 minutes until browned.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.
- Add the curry powder and chili paste, stirring to combine. Cook for 1 minute.
- Pour in the water and add the roasted marrow bones. Bring to a boil, then reduce heat and simmer for 1 hour.
- After an hour, remove the bones and strain the broth to remove solids. Return the broth to the pot.
- Stir in the coconut milk, soy sauce, and fish sauce. Simmer for an additional 10 minutes.
- Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
- To serve, divide the cooked noodles into bowls, ladle the hot broth over the noodles, and top with bean sprouts, cilantro, and green onions.
- Serve with lime wedges on the side for squeezing over the dish.
Notes
- For a vegetarian version, replace the beef marrow bones with vegetable broth and add tofu for protein.
- Adjust the level of spiciness by varying the amount of chili paste or adding sliced fresh chilies as a garnish.
