- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound beef stew meat, cut into 1-inch cubes
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups beef broth
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 cup green beans, trimmed and cut into 1-inch pieces
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the beef stew meat to the pot and brown on all sides, about 5-7 minutes.
- Stir in the cumin, coriander, paprika, cinnamon, and cayenne pepper (if using). Cook for 1-2 minutes to toast the spices.
- Pour in the beef broth, scraping the bottom of the pot to release any browned bits. Bring to a boil, then reduce the heat to low and cover. Simmer for 1 hour.
- After an hour, add the sliced carrots, diced potatoes, and chickpeas to the pot. Stir well and cover again. Continue to simmer for another 30 minutes, or until the vegetables are tender.
- Add the green beans and cook for an additional 10 minutes. Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro or parsley.
Notes
- For a spicier version, add more cayenne pepper or a diced jalapeño when sautéing the onions.
- Substitute the beef with chicken or turkey for a lighter option, adjusting the cooking time as needed for the different meat.
