- 1 pound fresh white anchovies, cleaned and filleted
- 1 cup extra virgin olive oil
- 1/2 cup fresh lemon juice
- 1/4 cup fresh orange juice
- 1 tablespoon lemon zest
- 1 tablespoon orange zest
- 4 cloves garlic, thinly sliced
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- In a mixing bowl, combine the olive oil, lemon juice, orange juice, lemon zest, orange zest, garlic, red pepper flakes, salt, and black pepper. Whisk until well blended.
- Place the cleaned and filleted anchovies in a shallow dish or a glass jar. Pour the marinade over the anchovies, ensuring they are fully submerged.
- Cover the dish or seal the jar tightly and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Before serving, gently toss the marinated anchovies with fresh parsley.
- Serve chilled as an appetizer or as part of a seafood platter.
Notes
- For a touch of sweetness, add a tablespoon of honey or agave syrup to the marinade.
- Substitute the white anchovies with sardines for a different flavor profile.
