- 8 ounces of mozzarella cheese, cubed
- 8 ounces of feta cheese, crumbled
- 1 cup of cherry tomatoes, halved
- 1/2 cup of black olives, pitted and sliced
- 1/4 cup of fresh basil leaves, chopped
- 1/4 cup of extra virgin olive oil
- 2 tablespoons of red wine vinegar
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1/2 teaspoon of crushed red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the mozzarella cubes, feta cheese, cherry tomatoes, black olives, and chopped basil.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, crushed red pepper flakes, salt, and pepper.
- Pour the marinade over the cheese and vegetable mixture, gently tossing to coat all ingredients evenly.
- Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
- Before serving, give the marinated cheese a gentle stir and adjust seasoning if necessary. Serve with crusty bread or crackers.
