  • 1 cup diced yellow onion
  • 4 cloves garlic, minced
  • 1 cup beef stock
  • 1/2 cup bourbon whiskey
  • 1/2 cup pure maple syrup
  • 1/4 cup tamari sauce
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon whole grain mustard
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef short ribs generously with sea salt and freshly ground black pepper.
  3. In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat.
  4. Add the short ribs, searing them for about 4 minutes on each side until they develop a deep brown crust.
  5. Remove the ribs from the pot and set them aside on a plate.
  6. In the same pot, toss in the diced onion and sauté for approximately 5 minutes until they become translucent and fragrant.
  7. Add the minced garlic and continue to cook for another minute, stirring frequently.
  8. Pour in the beef stock, bourbon whiskey, maple syrup, tamari sauce, apple cider vinegar, whole grain mustard, and crushed red pepper flakes if desired. Stir well to combine.
  9. Carefully place the short ribs back into the pot, ensuring they are immersed in the sauce.
  10. Cover the pot with a tight-fitting lid and place it in the preheated oven.
  11. Braise the ribs for 2.5 to 3 hours, or until they are fork-tender and easily detach from the bone.
  12. Remove the pot from the oven and let it rest for about 10 minutes. Skim off any excess fat from the sauce before serving.
