Savory Maple-Bourbon Braised Beef Ribs

- 2 pounds beef short ribs
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 1 cup diced yellow onion
- 4 cloves garlic, minced
- 1 cup beef stock
- 1/2 cup bourbon whiskey
- 1/2 cup pure maple syrup
- 1/4 cup tamari sauce
- 2 tablespoons apple cider vinegar
- 1 teaspoon whole grain mustard
- 1/2 teaspoon crushed red pepper flakes (optional)
Instructions
- Preheat your oven to 300°F (150°C).
- Season the beef short ribs generously with sea salt and freshly ground black pepper.
- In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat.
- Add the short ribs, searing them for about 4 minutes on each side until they develop a deep brown crust.
- Remove the ribs from the pot and set them aside on a plate.
- In the same pot, toss in the diced onion and sauté for approximately 5 minutes until they become translucent and fragrant.
- Add the minced garlic and continue to cook for another minute, stirring frequently.
- Pour in the beef stock, bourbon whiskey, maple syrup, tamari sauce, apple cider vinegar, whole grain mustard, and crushed red pepper flakes if desired. Stir well to combine.
- Carefully place the short ribs back into the pot, ensuring they are immersed in the sauce.
- Cover the pot with a tight-fitting lid and place it in the preheated oven.
- Braise the ribs for 2.5 to 3 hours, or until they are fork-tender and easily detach from the bone.
- Remove the pot from the oven and let it rest for about 10 minutes. Skim off any excess fat from the sauce before serving.
Notes
- For enhanced flavor, consider marinating the short ribs in the seasoning overnight prior to cooking.
- For a lighter twist, you can use pork ribs and adjust the cooking time as needed.
