Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with cupcake liners.
  2. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  3. Incorporate the eggs one by one, mixing well after each addition. Stir in the milk and vanilla extract until combined.
  4. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just blended.
  5. Fold in the diced mango and strawberries gently until evenly distributed.
  6. Spoon the batter into the cupcake liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
  8. While the cupcakes cool, prepare the frosting by mixing the powdered sugar, softened butter, heavy cream, and vanilla extract until smooth.
  9. Once cooled, frost the cupcakes generously with the creamy mixture and top with fresh mint leaves if desired.
