Description

Mango Sticky Rice Truffles are a delightful dessert that combines the flavors of sweet sticky rice and fresh mango, rolled into bite-sized treats.


Ingredients

  • 2 cups glutinous rice (sweet rice)
  • 1 ½ cups coconut milk
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 1 ripe mango, peeled and diced
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 1 tablespoon shredded coconut (optional, for garnish)

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 30-35 minutes, or until the rice is tender and sticky.
  3. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves, but do not let it boil. Remove from heat.
  4. Once the rice is cooked, transfer it to a large bowl and pour about 1 cup of the coconut milk mixture over the rice. Stir well to combine and let it sit for about 30 minutes to absorb the flavors.
  5. Once the rice has cooled slightly, wet your hands and take a small amount of the sticky rice mixture. Flatten it in your palm and place a few pieces of diced mango in the center. Mold the rice around the mango to form a ball. Repeat with the remaining rice and mango.
  6. Roll each truffle in the remaining coconut milk mixture, then in sesame seeds or shredded coconut if desired.
  7. Place the truffles on a plate and refrigerate for at least 1 hour to firm up before serving.

Notes

  • For a tropical twist, try adding a teaspoon of lime zest to the coconut milk mixture.
  • You can also substitute the mango with other fruits like strawberries or kiwi for a different flavor profile.
