Description
Mango Sticky Rice Truffles are a delightful dessert that combines the flavors of sweet sticky rice and fresh mango, rolled into bite-sized treats.

- 2 cups glutinous rice (sweet rice)
- 1 ½ cups coconut milk
- ½ cup granulated sugar
- ½ teaspoon salt
- 1 ripe mango, peeled and diced
- 1 tablespoon sesame seeds (optional, for garnish)
- 1 tablespoon shredded coconut (optional, for garnish)
Instructions
- Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results.
- Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 30-35 minutes, or until the rice is tender and sticky.
- While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves, but do not let it boil. Remove from heat.
- Once the rice is cooked, transfer it to a large bowl and pour about 1 cup of the coconut milk mixture over the rice. Stir well to combine and let it sit for about 30 minutes to absorb the flavors.
- Once the rice has cooled slightly, wet your hands and take a small amount of the sticky rice mixture. Flatten it in your palm and place a few pieces of diced mango in the center. Mold the rice around the mango to form a ball. Repeat with the remaining rice and mango.
- Roll each truffle in the remaining coconut milk mixture, then in sesame seeds or shredded coconut if desired.
- Place the truffles on a plate and refrigerate for at least 1 hour to firm up before serving.
Notes
- For a tropical twist, try adding a teaspoon of lime zest to the coconut milk mixture.
- You can also substitute the mango with other fruits like strawberries or kiwi for a different flavor profile.
