Ingredients

  • 2 cups unsweetened almond milk (or any milk of your choice)
  • 1 cup plain yogurt (Greek or regular)
  • 1 ripe mango, peeled and diced
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1 teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Chopped mint leaves for garnish (optional)

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond milk, yogurt, honey or maple syrup, ground cardamom, vanilla extract, and salt. Stir well until all ingredients are fully combined.
  2. Gently fold in the diced mango, reserving a few pieces for topping later.
  3. Divide the mixture evenly into four jars or containers with lids.
  4. Seal the jars and refrigerate overnight, or for at least 4 hours, to allow the oats to soak and soften.
  5. Before serving, give the jars a good stir and top with the reserved mango pieces and chopped mint leaves, if desired.

Notes

  • For added texture, mix in some chia seeds or nuts before refrigerating.
