- 2 cups rolled oats
- 2 cups unsweetened almond milk (or any milk of your choice)
- 1 cup plain yogurt (Greek or regular)
- 1 ripe mango, peeled and diced
- 1 tablespoon honey or maple syrup (adjust to taste)
- 1 teaspoon ground cardamom
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Chopped mint leaves for garnish (optional)
Instructions
- In a large mixing bowl, combine the rolled oats, almond milk, yogurt, honey or maple syrup, ground cardamom, vanilla extract, and salt. Stir well until all ingredients are fully combined.
- Gently fold in the diced mango, reserving a few pieces for topping later.
- Divide the mixture evenly into four jars or containers with lids.
- Seal the jars and refrigerate overnight, or for at least 4 hours, to allow the oats to soak and soften.
- Before serving, give the jars a good stir and top with the reserved mango pieces and chopped mint leaves, if desired.
Notes
- For added texture, mix in some chia seeds or nuts before refrigerating.
- Substitute the mango with other fruits like pineapple or berries for a different flavor profile.
