A refreshing and delightful Mango Coconut Sago Dessert, perfect for warm days.

- 1 cup small tapioca pearls
- 1 ½ cups water
- 1 can (13.5 oz) coconut milk
- ½ cup sugar
- 1 ripe mango, diced
- ½ teaspoon vanilla extract
- Pinch of salt
- Fresh mint leaves for garnish (optional)
Instructions
- Rinse the tapioca pearls under cold water until the water runs clear.
- In a medium saucepan, bring 1 ½ cups of water to a boil. Add the rinsed tapioca pearls and reduce the heat to a simmer. Cook for about 15-20 minutes, stirring occasionally, until the pearls become translucent.
- Once cooked, remove the saucepan from heat and let the tapioca pearls sit in the water for an additional 10 minutes. Drain and rinse under cold water to stop the cooking process.
- In a separate saucepan, combine the coconut milk, sugar, vanilla extract, and a pinch of salt. Heat over medium heat until the sugar dissolves, stirring occasionally. Do not let it boil.
- Add the drained tapioca pearls to the coconut milk mixture and stir well. Remove from heat and let it cool to room temperature.
- Once cooled, layer the sago mixture in serving glasses with diced mango. Start with a layer of sago, then a layer of mango, and repeat until the glasses are filled.
- Chill the parfaits in the refrigerator for at least 1 hour before serving.
- Garnish with fresh mint leaves if desired.
Notes
- For added texture, consider mixing in some diced kiwi or strawberries along with the mango.
- Substitute the coconut milk with almond milk for a lighter version, or use sweetened condensed milk for a richer flavor.
