- 1 pound large shrimp, peeled and deveined
- 1 ripe mango, diced
- 1/4 cup unsalted butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (adjust for spice preference)
- Salt and pepper to taste
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until melted.
- Add the minced garlic and sauté for about 1 minute, until fragrant.
- Sprinkle in the chili powder, smoked paprika, cayenne pepper, salt, and pepper. Stir to combine and cook for another minute.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque.
- Stir in the diced mango and remaining 2 tablespoons of butter. Cook for an additional 2 minutes, allowing the mango to soften slightly.
- Remove from heat and drizzle with fresh lime juice. Toss gently to combine.
- Serve immediately, garnished with chopped cilantro.
Notes
- For a tropical twist, add diced red bell pepper or jalapeño for extra flavor and color.
- Serve over rice or quinoa to make it a complete meal, or with tortilla chips for a fun appetizer.
