- 2 large rice paper wrappers
- 1 ripe avocado, sliced
- 1 ripe mango, peeled and sliced
- 1 cup shredded carrots
- 1 cup fresh spinach leaves
- 1/4 cup fresh cilantro leaves
- 1/4 cup water (for dipping rice paper)
- 2 tablespoons lime juice (for drizzle)
- 1 tablespoon honey (for drizzle)
- 1 teaspoon chili powder (for drizzle)
- 1/4 teaspoon salt (for drizzle)
Instructions
- Prepare the chili lime drizzle by whisking together lime juice, honey, chili powder, and salt in a small bowl. Set aside.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes pliable.
- Lay the softened rice paper on a clean surface. In the center, layer a few slices of avocado, mango, shredded carrots, spinach, and cilantro.
- Fold the sides of the rice paper over the filling, then roll from the bottom up to create a tight spring roll. Repeat with the remaining wrappers and filling.
- Serve the spring rolls with the chili lime drizzle on the side for dipping.

- For added protein, include cooked shrimp or grilled chicken in the spring rolls.
