Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking tray with parchment paper.
  2. In a bowl, blend the ricotta cheese with confectioners’ sugar, vanilla essence, grated lemon peel, and ground nutmeg until creamy and uniform.
  3. On a floured surface, roll out the puff pastry and cut it into squares measuring about 4 inches on each side.
  4. Spoon a generous tablespoon of the ricotta filling onto the center of each square.
  5. Carefully fold the pastry over the filling to create a triangle or pocket shape, pressing the edges firmly to seal.
  6. Use a fork to crimp the edges for a decorative touch.
  7. Brush the tops with the beaten egg for a golden finish.
  8. Bake the pastries in the oven for 20-25 minutes or until they rise and turn golden brown.
