Malt Chocolate and Marshmallow Sandwiches are irresistible!


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup malted milk powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, malted milk powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mini marshmallows and chocolate chips.
  5. Using a tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the back of the spoon.
  6. Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  7. Once cooled, sandwich two cookies together with additional mini marshmallows or a drizzle of melted chocolate if desired.

Notes

  • For a richer flavor, try adding a teaspoon of espresso powder to the dry ingredients.
  • You can also substitute the mini marshmallows with crushed graham crackers for a s’mores twist.
