Malt Chocolate and Marshmallow Sandwiches are irresistible!
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup malted milk powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, malted milk powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mini marshmallows and chocolate chips.
- Using a tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the back of the spoon.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Once cooled, sandwich two cookies together with additional mini marshmallows or a drizzle of melted chocolate if desired.
Notes
- For a richer flavor, try adding a teaspoon of espresso powder to the dry ingredients.
- You can also substitute the mini marshmallows with crushed graham crackers for a s’mores twist.
