Description

Malibu Chicken is a delicious low-carb dish featuring chicken breasts coated in a flavorful almond flour mixture, topped with ham and Swiss cheese.


Ingredients

  • 1 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon heavy cream
  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 4 slices Swiss cheese
  • 4 slices ham
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine almond flour, garlic powder, onion powder, paprika, salt, and pepper.
  3. In another bowl, whisk together the eggs and heavy cream until well combined.
  4. Dip each chicken breast into the egg mixture, allowing any excess to drip off, then coat thoroughly with the almond flour mixture. Place the coated chicken breasts on the prepared baking sheet.
  5. Heat olive oil in a large skillet over medium heat. Sear each chicken breast for about 3-4 minutes on each side until golden brown.
  6. Transfer the seared chicken breasts back to the baking sheet. Top each breast with a slice of ham and a slice of Swiss cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  8. Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley if desired.

Notes

  • For added crunch, serve with pork rinds or cucumber slices.
  • You can substitute Swiss cheese with provolone or cheddar for a different flavor.
  • For a spicy kick, add a sprinkle of red pepper flakes to the almond flour mixture.
