Description
Malawian Groundnut Chicken is a savory dish made with tender chicken thighs cooked in a creamy peanut sauce, perfect for serving over rice or quinoa.
Ingredients
Scale
- 2 pounds boneless, skinless chicken thighs
- 1 cup smooth peanut butter
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 1 can (14 ounces) diced tomatoes, with juice
- 1 cup chicken stock
- 2 tablespoons cooking oil
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (or to taste)
- Salt and black pepper to taste
- 1/4 cup fresh cilantro, chopped (for garnish)
- Cooked rice or quinoa (for serving)
Instructions
- Whisk together the peanut butter, diced tomatoes, chicken stock, soy sauce, brown sugar, cumin, smoked paprika, cayenne pepper, salt, and black pepper in a large mixing bowl until creamy and uniform.
- In a large skillet or Dutch oven, heat the cooking oil over medium heat. Add the diced onion and sauté for approximately 5 minutes until translucent and tender.
- Incorporate the minced garlic and grated ginger into the skillet, stirring for another 1-2 minutes until aromatic.
- Introduce the chicken thighs to the pan, searing them for about 5-7 minutes until golden brown on all sides.
- Pour the prepared peanut sauce over the chicken, ensuring each piece is generously coated. Bring to a gentle simmer, then lower the heat to maintain a soft bubbling.
- Cover the skillet and let it cook for 30-35 minutes, stirring occasionally, until the chicken is thoroughly cooked and tender.
- Taste the sauce and adjust the seasoning as needed. If too thick, add a splash more chicken stock to achieve your preferred consistency.
- Serve warm over a bed of rice or quinoa, and finish with a sprinkle of fresh cilantro on top.
Notes
- This dish serves 4 people.
- Adjust the cayenne pepper to control the spice level.
- Feel free to use chicken breasts instead of thighs if preferred.
