Instructions

  1. Whisk together the peanut butter, diced tomatoes, chicken stock, soy sauce, brown sugar, cumin, smoked paprika, cayenne pepper, salt, and black pepper in a large mixing bowl until creamy and uniform.
  2. In a large skillet or Dutch oven, heat the cooking oil over medium heat. Add the diced onion and sauté for approximately 5 minutes until translucent and tender.
  3. Incorporate the minced garlic and grated ginger into the skillet, stirring for another 1-2 minutes until aromatic.
  4. Introduce the chicken thighs to the pan, searing them for about 5-7 minutes until golden brown on all sides.
  5. Pour the prepared peanut sauce over the chicken, ensuring each piece is generously coated. Bring to a gentle simmer, then lower the heat to maintain a soft bubbling.
  6. Cover the skillet and let it cook for 30-35 minutes, stirring occasionally, until the chicken is thoroughly cooked and tender.
