Ingredients

  • 8 ounces cremini or button mushrooms, cleaned and sliced
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon vegetable oil
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. In a large bowl, combine gochujang, soy sauce, sesame oil, honey, minced garlic, and grated ginger. Mix well to create a marinade.
  2. Add the sliced mushrooms to the marinade, tossing to coat evenly. Let them marinate for at least 15 minutes for the flavors to meld.
  3. Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the marinated mushrooms along with the marinade.
  4. Sauté the mushrooms for about 5-7 minutes, stirring occasionally, until they are tender and have absorbed the flavors.
  5. Remove from heat and transfer the mushrooms to a serving dish. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the marinade.
  • Serve these mushrooms over rice or quinoa for a complete meal, or use them as a topping for tacos or burgers.
