- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/2 cup crushed candy canes (about 4–5 candy canes)
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the egg, vanilla extract, and peppermint extract to the butter mixture, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the crushed candy canes gently.
- Using a tablespoon, scoop out dough and roll into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Once cooled, dust the cookies lightly with powdered sugar for a festive touch.
Notes
- Serves 24 cookies.
- For a chocolate twist, substitute 1/2 cup of the flour with cocoa powder.
- To make these cookies even more festive, drizzle melted white chocolate over the cooled cookies and sprinkle with additional crushed candy canes.
