  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1/2 cup crushed candy canes (about 45 candy canes)
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the egg, vanilla extract, and peppermint extract to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the crushed candy canes gently.
  7. Using a tablespoon, scoop out dough and roll into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  9. Once cooled, dust the cookies lightly with powdered sugar for a festive touch.

  • For a chocolate twist, substitute 1/2 cup of the flour with cocoa powder.
