  • 2 cups water
  • 1 teaspoon vanilla extract

  • 1 cup shelled pistachios, chopped
  • 1/4 cup almond slivers (optional)
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Begin by melting the butter in a large skillet over medium heat.
  2. Gradually add the semolina, stirring frequently until it achieves a rich golden hue, which should take around 10-15 minutes.
  3. In a separate saucepan, mix the sugar, water, vanilla extract, and salt. Heat this mixture until it reaches a boil, then lower the heat and let it simmer for about 5 minutes, allowing it to thicken slightly.
  4. Once the semolina is perfectly golden, carefully incorporate the sugar syrup into the skillet, stirring continuously to ensure a smooth consistency.
  5. Cook this mixture for an additional 5-7 minutes, until it thickens and begins to separate from the sides of the skillet.
  6. Take the skillet off the heat and allow the mixture to cool for a few moments.
  7. When it’s manageable, transfer it to a greased 9×13 inch baking dish, pressing it down firmly with a spatula to create an even layer.
  8. Top the mixture with the chopped pistachios and almond slivers, if desired, gently pressing them into the surface.
  9. For an extra touch, sprinkle ground cinnamon on top.
  10. Allow the pistachio delight to cool completely at room temperature before cutting it into squares or diamond shapes.
