- 2 cups water
- 1 teaspoon vanilla extract

- 1 cup shelled pistachios, chopped
- 1/4 cup almond slivers (optional)
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- Begin by melting the butter in a large skillet over medium heat.
- Gradually add the semolina, stirring frequently until it achieves a rich golden hue, which should take around 10-15 minutes.
- In a separate saucepan, mix the sugar, water, vanilla extract, and salt. Heat this mixture until it reaches a boil, then lower the heat and let it simmer for about 5 minutes, allowing it to thicken slightly.
- Once the semolina is perfectly golden, carefully incorporate the sugar syrup into the skillet, stirring continuously to ensure a smooth consistency.
- Cook this mixture for an additional 5-7 minutes, until it thickens and begins to separate from the sides of the skillet.
- Take the skillet off the heat and allow the mixture to cool for a few moments.
- When it’s manageable, transfer it to a greased 9×13 inch baking dish, pressing it down firmly with a spatula to create an even layer.
- Top the mixture with the chopped pistachios and almond slivers, if desired, gently pressing them into the surface.
- For an extra touch, sprinkle ground cinnamon on top.
- Allow the pistachio delight to cool completely at room temperature before cutting it into squares or diamond shapes.
- It can be enjoyed at room temperature or chilled for a refreshing treat.
