Lucas Schoormans’s Lemon Tart is an easy delight that combines a buttery tart shell with a zesty lemon filling, perfect for any occasion.

- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- ½ cup unsalted butter, softened
- 1 large egg yolk
- 2 tablespoons cold water
- 1 cup granulated sugar
- 3 large eggs
- 1 cup fresh lemon juice (about 4–6 lemons)
- Zest of 2 lemons
- ¼ cup heavy cream
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, combine the flour and powdered sugar. Add the softened butter and mix until crumbly.
- Stir in the egg yolk and cold water until the dough comes together.
- Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and chill for 15 minutes.
- Bake the tart shell in the preheated oven for 15-20 minutes or until lightly golden. Remove from the oven and let it cool slightly.
- In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and heavy cream until smooth.
- Pour the lemon filling into the cooled tart shell.
- Bake the tart for an additional 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours before serving.
- Before serving, dust the top with powdered sugar.
Notes
- For a twist, try adding a tablespoon of poppy seeds to the filling for added texture.
- You can also substitute lime juice for a key lime variation.
