Description

Lucas Schoormans’s Lemon Tart is an easy delight that combines a buttery tart shell with a zesty lemon filling, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ½ cup unsalted butter, softened
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup fresh lemon juice (about 46 lemons)
  • Zest of 2 lemons
  • ¼ cup heavy cream
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine the flour and powdered sugar. Add the softened butter and mix until crumbly.
  3. Stir in the egg yolk and cold water until the dough comes together.
  4. Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and chill for 15 minutes.
  5. Bake the tart shell in the preheated oven for 15-20 minutes or until lightly golden. Remove from the oven and let it cool slightly.
  6. In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and heavy cream until smooth.
  7. Pour the lemon filling into the cooled tart shell.
  8. Bake the tart for an additional 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
  9. Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours before serving.
  10. Before serving, dust the top with powdered sugar.

Notes

  • For a twist, try adding a tablespoon of poppy seeds to the filling for added texture.
  • You can also substitute lime juice for a key lime variation.
