Ingredients

  • 1/4 cup granulated erythritol (or your favorite low-carb sweetener)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 tablespoon powdered erythritol (for sweetening the whipped cream)
  • 2 cups fresh strawberries, hulled and sliced

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by lining it with parchment paper.
  2. In a large bowl, mix together the almond flour, erythritol, baking powder, and salt until well blended.
  3. In a separate bowl, combine the melted butter, eggs, and vanilla extract, whisking until the mixture is smooth and creamy.
  4. Gradually add the wet ingredients to the dry mixture, stirring gently until everything is just combined.
  5. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. After baking, let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. While the cake cools, whip the heavy cream with the powdered erythritol until soft peaks form.
  9. Once the cake has cooled, carefully slice it in half horizontally.
  10. On the bottom layer, spread a generous amount of whipped cream, followed by half of the sliced strawberries.
  11. Place the top layer of the cake on this, and then spread the remaining whipped cream over the top.
  12. Finish by decorating with the rest of the strawberries for a beautiful presentation.

  • For a zesty kick, add a teaspoon of lemon zest to the batter.
