Description

Low-Carb Spicy Brazilian Coconut Chicken is an irresistible dish that combines the rich flavors of coconut milk and spices for a delightful meal.

Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs
  • 1 can (13.5 ounces) coconut milk
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely diced
  • 4 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper (to taste)
  • Salt and freshly ground black pepper to taste
  • Chopped fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Whisk together the coconut milk, lime juice, chili powder, smoked paprika, cumin, cayenne pepper, salt, and black pepper in a mixing bowl until smooth and well combined.
  2. Immerse the chicken thighs in the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours for deeper flavor infusion.
  3. In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until it becomes soft and translucent, approximately 5 minutes.
  4. Introduce the minced garlic and grated ginger to the skillet, stirring for another 1-2 minutes until the aroma fills the air.
  5. Take the marinated chicken out of the bowl and place it in the skillet. Cook the chicken for about 6-7 minutes on each side, ensuring it is fully cooked and reaches an internal temperature of 165°F.
  6. After the chicken is cooked, pour the leftover marinade into the skillet and allow it to simmer for about 5 minutes, letting the sauce thicken and absorb the flavors.
  7. Serve the chicken warm, garnished with a sprinkle of fresh cilantro and accompanied by lime wedges for an extra zesty kick.

Notes

  • For a spicier dish, increase the amount of cayenne pepper.
  • Marinating the chicken for longer enhances the flavor.
  • This dish pairs well with a side of steamed vegetables or a fresh salad.
