A delightful low carb dessert featuring a berry and vanilla jello ring that is both refreshing and satisfying.
Ingredients

- 2 cups water
- 1 cup assorted berries (fresh or frozen, like strawberries, blueberries, and raspberries)
- 1 cup sugar-free vanilla gelatin powder
- 1 cup heavy whipping cream
- 1 teaspoon pure vanilla extract
- 1 tablespoon sweetener (erythritol or stevia, adjusted to taste)
- 1/2 cup boiling water
Instructions
- Boil 2 cups of water in a medium saucepan.
- Once boiling, take it off the heat and whisk in the sugar-free vanilla gelatin powder until it dissolves completely.
- Add the 1/2 cup of boiling water to this mixture and stir thoroughly. Let it cool down to room temperature.
- In another bowl, mix the heavy whipping cream, vanilla extract, and sweetener. Beat the cream until it reaches soft peaks.
- When the gelatin mixture has cooled, gently incorporate the whipped cream into it, folding carefully to maintain the airy texture.
- In a bundt pan or jello mold, place the assorted berries at the bottom.
- Pour the gelatin and cream mixture over the berries, making sure they are well covered.
- Seal the mold with plastic wrap and place it in the refrigerator for a minimum of 4 hours or until it is fully set.
- To serve, gently flip the jello delight onto a serving dish. Cut into slices and savor the delightful flavors!
Notes
- For an extra zing, add a dash of lemon or lime juice to the gelatin mixture.
- Feel free to try different berries or even include a layer of nuts for added crunch.
