Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter and confectioners’ sugar together until the mixture is airy and pale.
  3. Stir in the vanilla essence until fully incorporated.
  4. In another bowl, combine the all-purpose flour, ground almonds, baking soda, sea salt, and nutmeg, mixing well.
  5. Gradually fold the dry ingredients into the butter mixture, stirring gently until just blended.
  6. Carefully mix in the lotus biscoff spread and, if desired, the chopped pecans, ensuring they are evenly distributed.
  7. Using a tablespoon, drop mounds of dough onto the prepared baking sheet, leaving ample space between each.
  8. Lightly press each mound down with your fingers to create a rounded shape.
  9. Bake for 10-12 minutes, or until the edges turn a delicate golden hue.
  10. Let the cookies rest on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
