Light Dauphinoise Potatoes are a guilt-free delight, perfect for a comforting side dish without the extra calories.


Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and thinly sliced
  • 1 cup low-fat milk
  • 1 cup low-sodium chicken or vegetable broth
  • 1 cup shredded reduced-fat cheese (such as Gruyère or cheddar)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
  2. In a medium saucepan, combine the low-fat milk, chicken or vegetable broth, minced garlic, thyme, salt, and pepper. Heat over medium until just simmering, then remove from heat.
  3. Layer half of the sliced potatoes in the prepared baking dish. Pour half of the milk mixture over the potatoes, then sprinkle half of the cheese on top.
  4. Repeat the layering process with the remaining potatoes, milk mixture, and cheese.
  5. Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
  6. Let the dish cool for 5-10 minutes before serving. Garnish with fresh parsley.

Notes

  • For extra flavor, add a pinch of nutmeg to the milk mixture.
  • To make it even lighter, substitute the cheese with nutritional yeast for a dairy-free option.
