- 2 pounds Yukon Gold potatoes, peeled and thinly sliced
- 1 cup low-fat milk
- 1 cup low-sodium chicken or vegetable broth
- 1 cup shredded reduced-fat cheese (such as Gruyère or cheddar)
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
- In a medium saucepan, combine the low-fat milk, chicken or vegetable broth, minced garlic, thyme, salt, and pepper. Heat over medium until just simmering, then remove from heat.
- Layer half of the sliced potatoes in the prepared baking dish. Pour half of the milk mixture over the potatoes, then sprinkle half of the cheese on top.
- Repeat the layering process with the remaining potatoes, milk mixture, and cheese.
- Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
- Let the dish cool for 5-10 minutes before serving. Garnish with fresh parsley.
Notes
- For extra flavor, add a pinch of nutmeg to the milk mixture.
- To make it even lighter, substitute the cheese with nutritional yeast for a dairy-free option.
