Ingredients

  • 6 large eggs
  • 1 cup cooked chicken, shredded
  • 2 cups fresh spinach, chopped
  • 1/2 cup onion, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup shredded low-fat mozzarella cheese
  • 2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until softened.
  3. Add the chopped spinach to the skillet and cook for an additional 2-3 minutes until wilted.
  4. In a mixing bowl, whisk together the eggs, thyme, salt, and black pepper. Stir in the shredded chicken and half of the mozzarella cheese.
  5. Pour the egg mixture over the vegetables in the skillet, gently stirring to combine. Cook on the stovetop for about 3-4 minutes until the edges begin to set.
  6. Sprinkle the remaining mozzarella cheese on top and transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
  7. Remove from the oven and let cool for a few minutes before slicing. Serve warm or at room temperature.

Notes

  • For a creamier texture, you can add 1/4 cup of milk or cream to the egg mixture before baking.
