A healthy and delicious Light Chicken & Spinach Frittata with Thyme, perfect for any meal.

- 6 large eggs
- 1 cup cooked chicken, shredded
- 2 cups fresh spinach, chopped
- 1/2 cup onion, diced
- 1/2 cup bell pepper, diced
- 1/2 cup shredded low-fat mozzarella cheese
- 2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until softened.
- Add the chopped spinach to the skillet and cook for an additional 2-3 minutes until wilted.
- In a mixing bowl, whisk together the eggs, thyme, salt, and black pepper. Stir in the shredded chicken and half of the mozzarella cheese.
- Pour the egg mixture over the vegetables in the skillet, gently stirring to combine. Cook on the stovetop for about 3-4 minutes until the edges begin to set.
- Sprinkle the remaining mozzarella cheese on top and transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
- Remove from the oven and let cool for a few minutes before slicing. Serve warm or at room temperature.
Notes
- For a creamier texture, you can add 1/4 cup of milk or cream to the egg mixture before baking.
- If you want to add more vegetables, consider including mushrooms or zucchini for added flavor and nutrition.
