- 1 cup dried green or brown lentils, rinsed and drained
- 2 medium zucchinis, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh mint leaves, chopped
- Juice of 1 lemon
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the rinsed lentils, diced zucchini, vegetable broth, cumin, salt, and black pepper to the pot.
- Bring the mixture to a boil, then reduce the heat to low.
- Cover and simmer for 25-30 minutes, or until the lentils are tender.
- Once the lentils are cooked, stir in the chopped mint and lemon juice.
- Adjust seasoning to taste if needed.
- Let the dish sit for a few minutes to allow the flavors to meld.
- Serve warm, garnished with additional mint leaves if desired.
Notes
- For added protein, consider mixing in cooked quinoa or diced chicken.
- If you prefer a spicier dish, add a pinch of red pepper flakes or a diced jalapeño during the onion sauté.
