Description

A refreshing and nutritious dish combining lentils, zucchini, and mint, perfect for a light meal.


Ingredients

  • 1 cup dried green or brown lentils, rinsed and drained
  • 2 medium zucchinis, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the rinsed lentils, diced zucchini, vegetable broth, cumin, salt, and black pepper to the pot.
  5. Bring the mixture to a boil, then reduce the heat to low.
  6. Cover and simmer for 25-30 minutes, or until the lentils are tender.
  7. Once the lentils are cooked, stir in the chopped mint and lemon juice.
  8. Adjust seasoning to taste if needed.
  9. Let the dish sit for a few minutes to allow the flavors to meld.
  10. Serve warm, garnished with additional mint leaves if desired.

Notes

  • For added protein, consider mixing in cooked quinoa or diced chicken.
  • If you prefer a spicier dish, add a pinch of red pepper flakes or a diced jalapeño during the onion sauté.
