Ingredients

  • 1 cup cooked lentils
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • 4 slices of whole grain bread
  • 1 cup vegan cheese shreds

Instructions

  1. In a mixing bowl, combine the cooked lentils, vegan mayonnaise, Dijon mustard, lemon juice, celery, and red onion.
  2. Season with salt and pepper to taste.
  3. Spread the lentil mixture evenly on two slices of bread.
  4. Top with vegan cheese shreds.
  5. Place the other two slices of bread on top to form sandwiches.
  6. Heat a skillet over medium heat and grill the sandwiches until golden brown on both sides and the cheese is melted.
  7. Serve warm and enjoy!

Notes

  • Feel free to add other vegetables like bell peppers or pickles for extra flavor.
