Description
A delicious plant-based alternative to traditional tuna melts, made with lentils and packed with flavor.
Ingredients
Scale
- 1 cup cooked lentils
- 1/4 cup vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup diced celery
- 1/4 cup diced red onion
- Salt and pepper to taste
- 4 slices of whole grain bread
- 1 cup vegan cheese shreds
Instructions
- In a mixing bowl, combine the cooked lentils, vegan mayonnaise, Dijon mustard, lemon juice, celery, and red onion.
- Season with salt and pepper to taste.
- Spread the lentil mixture evenly on two slices of bread.
- Top with vegan cheese shreds.
- Place the other two slices of bread on top to form sandwiches.
- Heat a skillet over medium heat and grill the sandwiches until golden brown on both sides and the cheese is melted.
- Serve warm and enjoy!
Notes
- Feel free to add other vegetables like bell peppers or pickles for extra flavor.
- Can be made gluten-free by using gluten-free bread.
