- 1 cup green or brown lentils, rinsed and drained
- 1 ½ cups water
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon paprika
- Salt and pepper, to taste
- 2 cups fresh spinach, chopped
- 1 cup cooked rice (white or brown)
- 1 tablespoon lemon juice
- 8 large grape leaves, rinsed and drained
- 1 cup vegetable broth
Instructions
- In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until lentils are tender. Drain any excess water and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until softened, about 3-4 minutes.
- Stir in cumin, coriander, paprika, salt, and pepper. Cook for another minute until fragrant.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- Remove from heat and stir in the cooked lentils and rice. Mix in lemon juice and adjust seasoning if needed.
- To assemble the rolls, lay a grape leaf flat on a clean surface, vein side up. Place about 2 tablespoons of the lentil and spinach mixture near the stem end of the leaf.
- Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.
- In a large pot, arrange the rolls seam side down. Pour vegetable broth over the rolls, cover, and simmer on low heat for 30 minutes.
- Let the rolls cool for a few minutes before serving. Enjoy warm or at room temperature.
Notes
- For added flavor, consider drizzling the rolls with tahini sauce before serving.
- You can substitute quinoa for rice for a gluten-free option.
