Ingredients

  • 1 cup green or brown lentils, rinsed and drained
  • 1 ½ cups water
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • 2 cups fresh spinach, chopped
  • 1 cup cooked rice (white or brown)
  • 1 tablespoon lemon juice
  • 8 large grape leaves, rinsed and drained
  • 1 cup vegetable broth

Instructions

  1. In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until lentils are tender. Drain any excess water and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until softened, about 3-4 minutes.
  3. Stir in cumin, coriander, paprika, salt, and pepper. Cook for another minute until fragrant.
  4. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Remove from heat and stir in the cooked lentils and rice. Mix in lemon juice and adjust seasoning if needed.
  6. To assemble the rolls, lay a grape leaf flat on a clean surface, vein side up. Place about 2 tablespoons of the lentil and spinach mixture near the stem end of the leaf.
  7. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.
  8. In a large pot, arrange the rolls seam side down. Pour vegetable broth over the rolls, cover, and simmer on low heat for 30 minutes.
  9. Let the rolls cool for a few minutes before serving. Enjoy warm or at room temperature.

Notes

  • For added flavor, consider drizzling the rolls with tahini sauce before serving.
  • You can substitute quinoa for rice for a gluten-free option.
