Ingredients

  • 2 cups cooked rice
  • 1 lb salmon fillet
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup steamed broccoli
  • 1 avocado, sliced
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, garlic powder, salt, and pepper.
  3. Place the salmon fillet on a baking sheet and brush with the lemon mixture.
  4. Bake the salmon for 12-15 minutes or until cooked through.
  5. While the salmon is baking, prepare the rice and steam the broccoli.
  6. Once the salmon is done, flake it into large pieces.
  7. In a bowl, layer the rice, steamed broccoli, and salmon.
  8. Top with avocado slices, lemon zest, and fresh parsley.
  9. Serve immediately and enjoy!
