A refreshing and healthy Lemony Salmon Rice Bowl that combines the flavors of salmon, rice, and zesty lemon.
Ingredients

- 2 cups cooked rice
- 1 lb salmon fillet
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup steamed broccoli
- 1 avocado, sliced
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, garlic powder, salt, and pepper.
- Place the salmon fillet on a baking sheet and brush with the lemon mixture.
- Bake the salmon for 12-15 minutes or until cooked through.
- While the salmon is baking, prepare the rice and steam the broccoli.
- Once the salmon is done, flake it into large pieces.
- In a bowl, layer the rice, steamed broccoli, and salmon.
- Top with avocado slices, lemon zest, and fresh parsley.
- Serve immediately and enjoy!
Notes
- For a spicier kick, add red pepper flakes to the lemon mixture.
- This dish can be served warm or cold.
- Substitute quinoa for rice for a different texture.
