A creamy and flavorful dessert that combines the tropical taste of coconut with the aromatic essence of lemongrass.

- 1 cup coconut milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 2 stalks lemongrass, trimmed and smashed
- 1 tablespoon unflavored gelatin powder
- 3 tablespoons cold water
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium saucepan, combine the coconut milk, heavy cream, sugar, and smashed lemongrass. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling. Remove from heat and let it steep for 15 minutes to infuse the lemongrass flavor.
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
- After the mixture has steeped, strain it through a fine-mesh sieve to remove the lemongrass. Return the strained mixture to the saucepan and reheat gently over low heat.
- Stir in the bloomed gelatin, vanilla extract, and a pinch of salt until the gelatin is completely dissolved.
- Pour the mixture into individual serving cups or ramekins. Allow it to cool to room temperature before covering with plastic wrap.
- Refrigerate for at least 4 hours or until set.
- To serve, run a knife around the edge of the panna cotta and invert onto a plate, or serve directly in the cups.
Notes
- For added flavor, consider garnishing with fresh berries or a drizzle of honey before serving.
- If lemongrass is unavailable, you can substitute with a few drops of lemon extract for a citrusy twist.
