Description

A delightful twist on the classic Italian dessert, this Lemon Tiramisu combines the creamy richness of mascarpone with the zesty freshness of lemon, creating a refreshing and indulgent treat.


Ingredients

  • 3 eggs
  • 250 g of mascarpone cheese
  • 100 g of sugar
  • 200 ml of whipping cream
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 200 ml of strong coffee
  • 2 tablespoons lemon liqueur (limoncello) (optional)
  • Ladyfingers biscuits
  • Cocoa powder for sprinkling
  • Thin slices of lemon for decoration

Instructions

  1. In a bowl, separate the egg whites from the egg yolks. Beat the egg yolks with the sugar until the mixture becomes creamy and pale.
  2. Add the mascarpone cheese and lemon zest to the yolk and sugar mixture. Mix until you achieve a smooth and uniform consistency.
  3. In another bowl, whip the whipping cream until soft peaks form.
  4. Gently fold the whipped cream into the mascarpone and egg yolk mixture using soft and enveloping movements.
  5. Incorporate the lemon juice and lemon liqueur (if using) into the mixture. Mix well to ensure the flavors meld.
  6. In a deep plate, combine the strong coffee with a hint of lemon zest.
  7. Lightly dip the ladyfingers into the brewed coffee and arrange them at the bottom of a serving dish.
  8. Pour a layer of the mascarpone mixture over the ladyfingers.
  9. Repeat the process, alternating layers of soaked ladyfingers and layers of mascarpone mixture until you exhaust your ingredients. Finish with a final layer of the mascarpone mixture on top.
  10. Refrigerate the tiramisu for a minimum of 4 hours, or even better, overnight. This allows the flavors to harmonize and the dessert to set beautifully.
  11. Just before serving, dust the top layer with cocoa powder and garnish with delicate slices of lemon.

Notes

  • For a non-alcoholic version, omit the lemon liqueur.
  • Ensure the coffee is cooled before dipping the ladyfingers to prevent them from becoming too soggy.
  • Adjust the amount of lemon juice to taste for a more or less zesty flavor.
