- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon cornstarch
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 1 tablespoon dried lemon myrtle leaves
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 2 cups assorted fresh berries (strawberries, blueberries, raspberries)
- Fresh mint leaves for decoration (optional)
Instructions
- Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper, tracing a 9-inch circle as a guideline.
- In a clean mixing bowl, whip the egg whites on medium speed until soft peaks form.
- Gradually add the granulated sugar, one tablespoon at a time, while increasing the speed to high until glossy stiff peaks form.
- Gently fold in the cornstarch, vinegar, vanilla extract, and dried lemon myrtle leaves.
- Dollop the meringue mixture onto the parchment-lined baking sheet, using the circle as a guide, and create a dip in the center.
- Bake the meringue for one hour, then turn off the oven and let it cool inside for at least one hour or overnight.
- While the meringue cools, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Once cooled, transfer the meringue to a serving dish, spread the whipped cream on top, and arrange the fresh berries over the cream.
- Optionally, sprinkle fresh mint leaves for decoration before serving. Enjoy!
