A delightful dessert featuring a crispy meringue infused with lemon myrtle, topped with fresh berries and whipped cream.


Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 tablespoon dried lemon myrtle leaves
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups assorted fresh berries (strawberries, blueberries, raspberries)
  • Fresh mint leaves for decoration (optional)

Instructions

  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper, tracing a 9-inch circle as a guideline.
  2. In a clean mixing bowl, whip the egg whites on medium speed until soft peaks form.
  3. Gradually add the granulated sugar, one tablespoon at a time, while increasing the speed to high until glossy stiff peaks form.
  4. Gently fold in the cornstarch, vinegar, vanilla extract, and dried lemon myrtle leaves.
  5. Dollop the meringue mixture onto the parchment-lined baking sheet, using the circle as a guide, and create a dip in the center.
  6. Bake the meringue for one hour, then turn off the oven and let it cool inside for at least one hour or overnight.
  7. While the meringue cools, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  8. Once cooled, transfer the meringue to a serving dish, spread the whipped cream on top, and arrange the fresh berries over the cream.
  9. Optionally, sprinkle fresh mint leaves for decoration before serving. Enjoy!
