Description

Lemon Icebox Pie is a refreshing and tangy dessert perfect for summer gatherings.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 can (14 ounces) sweetened condensed milk
  • 3 large egg yolks
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a pie dish.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In another bowl, whisk together granulated sugar, lemon juice, lemon zest, sweetened condensed milk, and egg yolks until smooth.
  5. Pour the lemon mixture into the cooled crust.
  6. Bake for an additional 15 minutes, then remove from the oven and let it cool to room temperature.
  7. Refrigerate for at least 4 hours or until set.
  8. Before serving, whip the heavy cream with powdered sugar until soft peaks form, then spread over the pie.
  9. Garnish with additional lemon zest if desired.

Notes

  • For a more intense lemon flavor, add more lemon zest.
  • This pie can be made a day in advance for convenience.
  • Store leftovers in the refrigerator for up to 3 days.
