Lemon Icebox Pie is a refreshing and tangy dessert perfect for summer gatherings.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 can (14 ounces) sweetened condensed milk
- 3 large egg yolks
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a pie dish.
- Bake the crust for 10 minutes, then let it cool.
- In another bowl, whisk together granulated sugar, lemon juice, lemon zest, sweetened condensed milk, and egg yolks until smooth.
- Pour the lemon mixture into the cooled crust.
- Bake for an additional 15 minutes, then remove from the oven and let it cool to room temperature.
- Refrigerate for at least 4 hours or until set.
- Before serving, whip the heavy cream with powdered sugar until soft peaks form, then spread over the pie.
- Garnish with additional lemon zest if desired.
Notes
- For a more intense lemon flavor, add more lemon zest.
- This pie can be made a day in advance for convenience.
- Store leftovers in the refrigerator for up to 3 days.
