- 2 cups cooked quinoa
- 1 pound large shrimp, peeled and deveined
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat the oven to 375°F. Grease a 9×13-inch baking dish with cooking spray or olive oil.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove from heat.
- In a large mixing bowl, combine the cooked quinoa, sautéed shrimp, chopped spinach, cherry tomatoes, mozzarella cheese, Parmesan cheese, basil, lemon zest, lemon juice, salt, black pepper, and red pepper flakes (if using). Mix well until all ingredients are evenly combined.
- Transfer the mixture to the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
- For a vegetarian option, substitute shrimp with chickpeas or tofu.
- Add a squeeze of fresh lemon juice before serving for an extra burst of flavor.
