Ingredients

  • 2 tablespoons olive oil
  • 2 medium leeks, cleaned and sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 cup heavy cream
  • 3 large eggs
  • 1 cup smoked salmon, chopped
  • 1 cup shredded Gruyère cheese
  • 1 pre-made pie crust (9-inch)
  • Fresh dill for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the sliced leeks, salt, pepper, and thyme. Sauté for about 5-7 minutes until the leeks are soft and translucent. Remove from heat and let cool slightly.
  3. In a mixing bowl, whisk together the heavy cream and eggs until well combined.
  4. Stir in the sautéed leeks, smoked salmon, and shredded Gruyère cheese into the cream and egg mixture.
  5. Place the pie crust in a 9-inch tart pan or pie dish. Pour the leek and salmon mixture into the crust, spreading it evenly.
  6. Bake in the preheated oven for 30-35 minutes, or until the tart is set and the top is lightly golden.
  7. Allow the tart to cool for 10 minutes before slicing. Garnish with fresh dill if desired.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream and use low-fat cheese.
  • Add a handful of fresh spinach or arugula to the filling for extra nutrients and color.
