Description

A delicious Lebanese dish featuring grilled chicken marinated in za’atar and served with a tangy sumac yogurt.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 3 tablespoons za’atar spice blend
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 2 tablespoons sumac
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

Instructions

  1. In a large bowl, combine the za’atar, olive oil, lemon juice, minced garlic, salt, and black pepper. Mix well to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and let any excess drip off. Discard the remaining marinade.
  5. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  6. While the chicken is grilling, prepare the sumac yogurt by combining the Greek yogurt, sumac, lemon juice, salt, and garlic powder in a bowl. Mix until smooth.
  7. Once the chicken is done, let it rest for 5 minutes before slicing. Serve with the sumac yogurt on the side.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the marinade.
  • You can substitute chicken breasts for thighs if you prefer a leaner cut.
  • Serve with a side of tabbouleh or grilled vegetables for a complete meal.
